Dan works at Applebee's and, being as it was football season, I was often going there to watch games while he worked. I have made it a habit to bring along home baked goodies for the staff when I go. Not every time, but sometimes. I have brought chocolate chip cookie, brownies, Reeces bars, and the most recent goodie was blueberry cheesecake.
While putting in time off requests at work, Dan realized he had asked for wrong times off. His manager was very helpful in working with him to get it straightened out and as a thank you Dan asked him what kind of goodie we could make him. "I like fruity cheesecake," he said. So after Dan told me this, I jumped on Pinterest and quickly found this delicious recipe for blueberry cheesecake bars. About a week later I made them and brought them to Applebee's, where I got lots of "Julie, you need to start your own desserts business!" type compliments and had one worker refer to them as "Blueberry Yum-Yums". The manager also said they were very delicious. Right then I knew I wanted to share the recipe with you!

(250 g each) Brick Cream Cheese, softened 3/4 cup sugar 2 large eggs 1 tsp. vanilla 1 jar (250 mL) blueberry jam 1 cup blueberries |
Directions
Preheat oven to 350°F. Pour melted butter into 13x9-inch baking pan. Sprinkle crumbs over butter; mix well. Press firmly and evenly onto bottom of pan.
Beat cream cheese until smooth. Add sugar, eggs and vanilla, beating until well blended; set aside. Stir jam in jar until softened. Spread jam evenly over crust; sprinkle with blueberries. Top with cream cheese mixture.
Bake 30 min. or until slightly puffed. Cool completely in pan. Cut into 24 bars to serve. Refrigerate leftover bars for up to 3 days.
